0 responses 0 comments April Hood, who works at Liberty High School, has lived in the Harvest Creek area with her husband, Cory, a railroad engineer, for 13 years. They have four children who attend Columbia Elementary, Fruitvale Junior High and Liberty. April got this recipe for vegetarian casserole from her mother-in-law, and she said it's a simple meal the whole family loves.

Veggie Casserole

cooked rice
steamed zucchini
tomatoes
green chilies-diced
shredded Monterey Jack cheese
sour cream mixture

layer 1 - 2 cups cooked rice
layer 2 - zucchini
layer 3 - tomatoes
layer 4 - diced green chilies
layer 5 - cheese
layer 6 - 1 cup sour cream, one egg, diced green onion, garlic salt, pepper mixed together
layer 7 - cheese

Cook at 350 degrees until top layer has brown crust.
